It’s another fun week for linking up with I Love You More Than Carrots for ‘Project Pinterest’ Last week I reported on the delicious and easy Ham and Cheese Quinoa Quiches I made from Pinterest. This week I wanted to do something different and my friend recently pinned these cookies, The Rolo Cookies! I thought I would surprise her and make her them for her birthday today!
I cheated on these cookies and used a boxed cookie mix. They didn’t come out as well at the photo, that’s for sure and they were actually kind of difficult to make. Even with a boxed mix, which was kind of strange. I mixed the box mix together and put it in the fridge overnight becuase it was far too goopy to wrap the dough around the Rolo.
If you want to use a boxed cookie mix, you just need some Rolos (don’t mind the one that is missing the wrapper, B had to snack before I even started…) A stick of butter and one egg.
Mixed together, here’s the lovely mix. I should have ‘rolled’ the dough in the cinnamon sugar mix, but I wasn’t patient and it was at 11 pm at night.
This was not going to be rolled around a Rolo, no way no how. Put it in the fridge overnight to get it to harden up and it helped a ton.
Pat down the dough into a little oval pancake. The only thing that’s hard about these cookies is that you need a lot of dough to cover the Rolo. They aren’t little candies, and so therefore the cookies are HUGE.
Then you just form a ball around the Rolo candy. It was much harder than I expected, so they better taste amazing. :)
The other reason they have to be so big is because if you don’t have dough under the Rolo, it melts onto the baking sheet and then the cookies don’t come off as easily. They didn’t come out as well as I wanted them too, but a cookie is a cookie right? :) I probably won’t make these again with all the little tricks to these. They just need so much dough to go all the way around the Rolo! I don’t get how in the Pinterest photo they are all such small cookies. Oh well! They still tasted pretty good and I’m sure my friend will like them :)
