So lately, I’ve been trying to eat better. Possibly because my new job has inspired me to get back into being super healthy and it’s really easy to do it during my work hours, thankfully. I worked out everyday last week, which is really a huge thing for me. It’s easy for me to get motivated, but not so easy for me to get out of bed in the morning. I did it though and worked out every day. Along with working out, I also the same delicious salad pretty much every day for lunch. I don’t like very many types of lettuce, but I do eat spinach. I got this idea from work and let me tell you, I will most likely have it every day until peaches go out of season.

It’s super easy to make. One whole peach, a handful of blueberries, some spinach and a balsamic vinegar overtop. At work we have these candied walnuts that I throw on top of it but at home I haven’t gotten them yet. But yea, I’m overly obsessed.


Another new obsession, which is shocking in itself, is these delightful little guys, another treat I learned about and how to cook at work.

Brussel Sprouts! Who knew? I had them at lunch one day this week and they are really easy to make and I’ve added them to my weekly dinner plans :)

Saturday morning was a 2.5 mile run and then I worked out at the gym for an hour, which was great and I really worked out my arms and did a lot of lunges. I have been foam rolling and trying to stretch more than normal to help alleviate any possible tightness that is happening in my IT band. I felt all those lunges the next day when I went for my 6 mile run on Sunday. It was so hot out and I really just wanted to call it quits before I was done, but I kept reminding myself this…

I felt awesome when I got home and was glad that I stuck with it and finished. It felt like an awesome way to finish my week off.

I went shopping for all our food this week as well and got some good stuff. I’m pretty excited to try to make some new things for dinner and to be living a healthy lifestyle.

I’m pretty re-energized after last week though, even with the work adjustment. Everything is going well and I’m working on figuring out the podcast situation so I can listen to them on the way to work.
