Cookie Monster time

So the other day, I was a bit bored at home. I had gone to the gym. Walked George. Vacuumed the house. Watched tv, but still had the urge to do something. B was gone at work, I love baking and we had quite a few of the ingredients in the house for cookies. Now, cookies ALWAYS haunt me because I, for some reason, end up with crappy ones. Too crunchy, too soggy, not baked enough, weird middles, it never ends, but I had nothing better to do and thought making some cookies would be fun. The recipe I followed is a family friends recipe and the cookies are delicious. They are SUPER easy and the recipe says “Serves: Many” Well I should have taken into consideration what many may mean to some people. In my mind, many means like 50. Which I thought perfect, 40 to the fire station, 5 to the in-laws, 5 for us. Well, 108 cookies later… Needless to say 70 are going to the fire station, 10 went to the in-laws and some are reserved for my cousins and I’m taking some tonight to dinner with friends. But I wanted to share the recipe becuase they are some of the best and easiest cookies I’ve made. Ever. AND they turned out well! I used white chocolate chips because that’s what we had at home.

Judy’s Chocolate Chip Cookies

Serves – Many (108 good sized cookies)

4 cubes margarine

2 cups sugar

2 cups brown sugar

1 tablespoon vegetable oil

2 tablespoon vanilla

Cream the above ingredients together before adding the following

3 eggs

1 teaspoon of salt

1 1/2 teaspoon of baking soda

6 cups of flour (add one at a time while mixing)

4 cups of chocolate chips

Drop on cookie sheet and bake for 12-15 minutes at 350* (Mine baked for 13:30)

Maybe the 6 cups of flour or 4 cubes of margarine should have given me a hint that I would end up with a billion cookies, but alas, it didn’t.

During the process I felt like I just kept putting more and more cookie dough on the cookie sheets! When I finished, I had four ziploc bags full of cookies, like these.

So many delicious cookies! The guys at the firehouse said they were good, which was nice to hear since they are picky little cookie monsters.

It’s a great, easy recipe and makes a ton of cookies! Great for a party or event.

    This looks awesome! I have a party coming up the end of July and will use this! I noticed you used your KitchenAid…could you fit everything in at once or did you have to do them seperately?

    You crack me up! They look delicious…thanks for sharing the recipe! =) I bake often…lucky for me I have 3 kiddos to inhale them all. I often make double batches (like the recipe you’ve posted) & bake half & freeze the other unbaked portion for another time. If I’m in the mood I’ll shape them into little balls before freezing in which case you can bake as many or as litte as you want. OR if I’m too lazy I just freeze the whole batch in plastic wrap which means I have to bake the entire batch which the hubby & kiddos appreciate!
